Recept: Platte Zeeuwse oester

Ingredients: 

  • say sauce without sugar (1el)
  • sesam oil (1kl)
  • sushi vinegar (1el)
  • Flat oyster from Zeeland(3)
  • cucumber (1)
  • sea fennel (10gram)
  • bronze sea fennel (10gram)
  • olive oil (1el)
  • timut pepper 
  • zeste and juice of 1/2 lime

Preparation:

For the oriental dressing, combine the soy sauce, sesame oil, lime juice, lime zest and sushi vinegar.

Open the oysters and marinate them briefly with the oriental dressing..

Make cucumber balls with a baller spoon* and sprinkle with pepper, lime juice and olive oil..

Place the cucumber balls on the oysters and finish with salty herbs.

**If you don't have a scoop spoon, you can just cut cubes of cucumber

Festive mocktail

Mocktail Garnish: 

  • ice cubes (4) 
  • lime (1 slice) 
  • forest fruits

Preparation:
 
Serve the Rhubarb & Fennel mocktail (150 ml) on the ice.
Add fresh forest fruits. Finish with a slice of lime.
